Health Report - aug 22 - I Love Kimchi!



I love kimchi! That's right. I love it! I can't wait until my next dish! For me kimchi was an acquired taste, that became an important part of my diet. What is kimchi? It's a fermented vegetable dish from Korea. Did you know that Health Magazine wrote kimchi is “One of Top Five Healthiest Foods of the World?" That's right.

What are the ingredients?
There are many kinds of kimchi. The most common is Napa Cabbage kimchi, but there are over 100 different varieties of kimchi. I am aware of nine different types of Kimchi: Gat kimchi, Baech'u Keot'cheoli, Oi Sobaki, Muuch'ae Kimchi, Nabak Kimchi, Bossam kimchi, Ch'ongak kimchi, T'ong Baegu'u Kimchi, Bae Kimchi, Bossam kimchi, Ch'ongak kimchi, and T'ong Baegu'u kimchi. Talk about tongue twisters!! If you are not Korean, then there is a good chance you will struggle with pronouncing these dishes.

My favorites are Napa Cabbage Kimchi(without fish sauce) and Cucumber Kimchi(without fish sauce), but I am sure that I will find another kimchi that can be added to my favorites list. Temple Kimchi is another type of kimchi that is served to Buddhists and a like(me!). Buddhists do not add fish sauce, oysters, or as many spices when making their kimchi which is suitable for Vegans.

What are the ingredients for kimchi using fish paste?
1 cup plus 1 tablespoon coarse sea salt or kosher salt
2 heads Napa cabbage, cut into quarters or 2-inch wedges, depending on size of cabbage
1 bulb garlic, cloves separated and peeled
2-inch) piece of ginger root
1/4 cup fish sauce or Korean salted shrimp
1 Asian radish, peeled and grated
1 bunch of green onions, cut into 1-inch lengths
1/2 cup Korean chili powder
1 teaspoon sugar (optional)
Sesame oil (optional)
Sesame seeds (optional)
What are the ingredients for Kimchi without fish paste?

Dr. Ben Kim's recipe for kimchi without fish paste is as follows:
Napa cabbage - approximately one pound
4 cups of cold water
3 tablespoons of sea salt
1 tablespoon of fresh garlic, finely chopped
1 tablespoon of fresh ginger, finely chopped
1 tablespoon of fresh green onions (scallions), finely chopped
1 teaspoon of dried red chili pepper flakes (more if you like things spicy, less if you don't)
1 1/2 to 2 teaspoons of sugar
What do experts say about kimchi?

According to the Japanese, kimchi became a dish that could prevent disease and improve health.

Under “nutrition and eating well” column, Healthy Magazine states:
Kimchi (or kimchee) is loaded with vitamins A, B, and C, but its biggest benefit may be in its “healthy bacteria” called lactobacilli, found in fermented foods like Kimchi and yogurt. This good bacteria helps with digestion, plus it seems to help stop and even prevent yeast infections, according to a recent study. And more good news: Some studies show fermented cabbage has compounds that may prevent the growth of cancer.
Furthermore, foods like sauerkraut, kimchi, and pickles are healthy because they are part of a group of foods known as fermented foods. Health Magazine states:
Recent research validates that fermented foods aid in digestion, support immune function, and increase overall nutritional status by adding B vitamins and anti-inflammatory omega-3 fatty acids.Consuming foods that contain live lacto-bacteria has protective benefits against harmful, pathogenic microorganisms.
NutritionData.com confirms that foods like sauerkraut are low in Saturated Fat, and very low in Cholesterol. It is also a good source of Calcium and Magnesium, and a very good source of Dietary Fiber, Vitamin C, Vitamin K, Vitamin B6, Folate, Iron, Potassium, Copper and Manganese.

Sauerkraut is great for weight loss, optimum health, and minimal weight gain. Since sauerkraut is fermented cabbage as is Kimchi, one can safely conclude they are very healthy.

Does Kimchi cause flatulance?

I have experienced first-hand increase flatulance due to kimchi consumption. But not all kimchi types cause flatulance, it depends on the vegetable. Cabbage is known to be a flatulance causing vegetable; therefore, be careful when eating cabbage kimchi and make sure you chew your cabbage well. Because when cabbage passes through the stomach and small intestine and gets into the colon which combines with bacteria to manufacture some very malodorous gases. If you are not sure which kimchi to eat, then it's a matter of trial and error. Hopefully, you can find a safe kimchi!


In conclusion, Kimchi is for everyone!
There are many ways to make kimchi for all diets from the Standard Food Diet to the raw Vegan diet. I prefer the Temple Kimchi on the spicy side, which is great on a cold winter’s day. Whatever you do just give it a try, you just might like it, and receive the health benefits that we all need.

Health Report - Aug 21- Hemp for Your Brain



Despite rapid scientific progress, much about how brains work remains a mystery. The operations of individual neurons and synapses are now understood in considerable detail, but the way they cooperate in ensembles of thousands or millions has been very difficult to decipher. Methods of observation such as Neuroimaging functional brain imaging tell us that brain operations are highly organized, but these methods do not have the resolution to reveal the activity of individual neurons.



Hemp is considered a great source for healthy brain:
Brain health: because EFAs(essential fatty acids) make up a large portion of the brain, hemp is especially beneficial for brain health, particularly memory function. Membrane loss of EFAs has been found in such disorders as Alzheimer's and Parkinson's diseases. Research has shown that a diet with a proper balance of omega-6 to omega-3 fatty acids–such as in hemp oil–may help delay or reduce the neurological effects of these diseases and improve quality of life

As we age in life, we start to take health as an important priority in our lives. According to BrainReady.com, diet plays an important role in excellent brain health. Hemp, is a good source of essential fatty acids and is great for our brains. Everyone wants to think clearly as we get older, and be able to perform our daily tasks efficiently; therefore, lets include hemp in our diet, and see the difference it can make.

Is afternoon napping good for you?

I don't make afternoon napping a habit but after seeing Chinese Teachers nap, I started to take taps to regain some energy.

What do the experts say about napping?
Dimitrios Trichopoulos at Harvard School of Public Health in Boston, Massachusetts, US, and colleagues concluded from a six year study that 40% of afternoon nappers are less like to die from heart disease than those who do not nap in midday.

New York researchers found that people between the ages of 55 and 85 who had the opportunity to nap performed better on mental ability assessments than those who did not. I am sure that the age limit could cover younger adults. Researchers recommend that napping can last up to 120 minutes and one shouldn't nap later than 6pm.

Conclusion, Everyone should nap!
I had a nap in the late afternoon and really felt better. After all the research that has been done, one can not help but conclude that we should be napping in the afternoon much like the Chinese and the Mexicans. I love cats that nap in the afternoons too. :-)

    I have experienced improvement in game play but I don't really have any measure to indicate the improvement in a practical way. The only indication is I have improved considerably in the scrabble. I manage to get to 300 or more when I have good concentration.

    My weakness so far is speed. I need to develop speed and the program will train me to think faster. This is cool. I don't have to worry about this. I remember I use to be like 19%, but now I am at 35%

I really enjoyed my liquid diet that was great for the most part. Unfortunately I ran into a health problem during this fast, but this is common when on this kind of diet. I am really happy that I can wear jeans because before I was too fat to wear them and look good.

Before I started this diet, I ate most foods which is also known as standard american diet (SAD), but now I am a Vegan and only eat fruits, vegetables, nuts, and grains. For the last 46days I have not gained any weight. I have kept to the vegan diet and I haven't gained a pound!!!

Health Report - aug 15 - Public Enemies

Movies




Public Enemies is a 2009 American crime film co-written and directed by Michael Mann. Set during the Great Depression, it focuses on the true story of FBI agent Melvin Purvis's attempt to stop criminals John Dillinger, Baby Face Nelson, and Pretty Boy Floyd. The film is an adaptation of Bryan Burrough's non-fiction book Public Enemies: America's Greatest Crime Wave and the Birth of the FBI, 1933–34. Christian Bale plays FBI agent Purvis, Johnny Depp plays Dillinger, Marion Cotillard plays Dillinger's girlfriend Billie Frechette, Channing Tatum plays Floyd and Giovanni Ribisi plays Alvin Karpis.

I really enjoyed this movie because it has so many things that I like about good movies. It's based on a true story. I learned about the crime scene during the Great Depression, and John Dillinger. I loved the character so much that I was deeply sadden by his death at the end of the movie. The public enemies of the time were John Dillinger, Baby Face Nelson, and Pretty Boy Floyd. I felt that character development was weak for Baby Face Nelson and Pretty Boy Floyd. I didn't know that FBI started during the depression.

I watch the movie alone and it started at 8:30pm. I know that Joe and his date were watching too but I didn't look for him. I saw him in front of the elevators waiting.

i am holding until I feel better.

Running Record
I will not run until I am completely healthy. For now walking with weights and yoga is all I need.

Health Report - aug 14 - Shabu Shabu



Japanese variant of hot pot. The dish is related to sukiyaki in style, where both use thinly sliced meat and vegetables, and usually served with dipping sauces. However, it is starkly different in taste; shabu-shabu is more savory and less sweet than sukiyaki. It is considered a winter dish but is eaten year-round.

The dish is traditionally made with thinly sliced beef, though modern preparations sometimes use pork, crab, chicken, duck, or lobster. Most often, tender ribeye steak is used, but less tender cuts such as top sirloin are also common. A more expensive meat, such as Wagyu, may also be used for its enhanced flavor and texture.


After our last class, all the students, Hamish and myself went to eat Shabu Shabu. I really enjoyed it. These students were the best yet.

Health Report - aug 13 - Vitamin B-12 Deficient



While a vitamin deficiency does not sound all that serious, it really can be. The signs and symptoms along can be cause for alarm. Some common signs of this problem include:
Diarrhea
Fatigue
Numbness of the extremities
Sore mouth
Loss of appetite
Nausea
Cessation of menstruation
Confusion
Memory loss
Hallucinations
Disorientation
Anemia
Nervousness
Behavioral changes
Enlarged mucus membranes

Yes, those are a lot of signs and symptoms. If you have a combination of the above, you should really see your doctor right away. Studies have shown that B12 deficiency can even cause nerve damage.
It can be a scary thought to one day learn that you are seriously lacking this vitamin to the point where it is adversely affecting your health. If it turns out that you are suffering from anemia caused by a lack of B12, you will most likely be treated with B12 injections and then later on weaned off of these shots to be replaced by a balance diet. If, however, you have something called pernicious anemia, you will more than likely need B12 injections for the rest of your life.
A lack of vitamin B12 can reek havoc on your body, not to mention your mind. However, with an acute awareness of your own body and proper treatment, you should be just fine.

Health Report - aug 12 - Urine pH




Urine can provide a fairly accurate picture of body chemistry, because the kidneys filter out the buffer salts of pH regulation and provide values based on what the body is eliminating. Urine pH can vary from around 4.5 to 9.0 in extremes, but the ideal range is 6.0 to 7.0. If your urinary pH fluctuates between 6.0 to 6.5 first thing in the morning and between 6.5 and 7.0 in the evening before dinner, your body is functioning within a healthy range.

I have low energy today. But my pH behaved the same way as it did yesterday. my pH was dark orange in the morning but in the afternoon about 2:30pm, it was dark green 8 - 8.5. This is quite a swing. I imagine that the foods we eat through the day affect our pH values. Since cancer likes low pH, this is good news. My blood sugar is 88 in the morning which is good news too. My pancreas is happy and if I have cancer, it would be shrinking.

i am holding until I feel better.

Running Record
I will no run until I am completely healthy. For now walking with weights and yoga is all I need.
